How to prepare garlic soup

Garlic soup: a simple and refined recipe

Garlic soup is a bold first course, which may not be intriguing due to the strong presence of this particular plant, which does not meet the taste of many. But the mix of ingredients necessary for its creation creates a combination of very pleasant aromas and scents, combined with a creamy and velvety texture on the palate. The raw materials for the recipe for garlic soup are linked to the territory and easy to find: in fact, you will need two heads of garlic, 400ml of water, a litre and a half of vegetable broth, two eggs, two tablespoons of plain flour, salt and pepper as needed. To decorate the finished dish, simply add a sprinkling of chopped parsley and a slice of toasted bread. These are the doses for four people, which allow you to prepare four large bowls of garlic soup in no time. There are many reinterpretations of this classic recipe, and among these the most famous is the Spanish garlic soup, which includes the addition of paprika in some versions, ham in others, and the presence of chopped almonds in others. Then there is the French version, a garlic and onion soup, often with the addition of melted cheese and bread croutons inside, characterised by a more liquid consistency than the creamy Italian version.

Garlic soup: preparation step by step

First of all, before starting to make the actual soup, it is necessary to prepare the vegetable broth: to do this, just wash the two heads of garlic thoroughly, deprive them of the skins and cut them into wedges; then, transfer them into a pot with water and a pinch of salt and cook until you get a softness that allows you to crush them with the fork. At this point, beat the eggs in a bowl, to which the sifted flour will be added: the mixture obtained will be poured into the pot containing the hot vegetable broth and, stirring slowly, cooked for about 20 minutes, adjusting salt and pepper if necessary. While the soup is cooking, we move on to the preparation of the dish: we then crush the parsley and roast one or more slices of bread, which will accompany the garlic soup. Then pour the soup into a bowl and garnish the dish, now ready to be served. Garlic soupis a very simple and fast recipe, as well as being an inexpensive dish.
